Apple-Rice Medley

ingredients:
  • 1 package (6 ounces) long-grain and wild rice mix
  • 1 cup (4 ounces) shredded mild cheddar cheese, divided
  • 1 cup chopped washington golden delicious apples
  • 1 cup sliced mushrooms
  • 1/2 cup thinly sliced celery

preparation instructions:

  1. Prepare rice mix according to package directions.
  2. Preheat oven to 350°.
  3. Add 1/2 cup cheese, apple, mushrooms, and celery to rice; toss to combine.
  4. Spoon mixture into 1-quart casserole dish.
  5. Bake 15 minutes.
  6. Top with remaining 1/2 cup cheese.
  7. Bake until cheese melts, about 10 minutes.

Scalloped Apple Bake

 prep time: 25 minutes 
 
ingredients:
  • 1/4 cup butter, melted
  • 1/4 cup sugar
  • 2 teaspoons grated orange zest
  • 1 teaspoon ground cinnamon
  • 11/2 cups corn bread stuffing
  • 1 can (16 ounces) whole berry cranberry sauce
  • 1/2 cup coarsely chopped pecans
  • 1/3 cup orange juice or water
  • 4 large apples, cored and thinly sliced

preparation instructions:

  1. Lightly mix butter, sugar, orange zest, cinnamon, stuffing and pecans and set aside.
  2. Mix cranberry sauce, juice and apples.
  3. Add half the stuffing mixture; mix lightly.
  4. Spoon into 8-inch square baking dish.
  5. Sprinkle remaining stuffing mixture over apple mixture.
  6. Bake at 375° for 40 minutes or until apples are tender.
